What Cured Your Munchies Today?

I have to stay on a super restricted diet because of my limited activity level so no goodies for me, but I munch on low sodium venison jerky a lot for weed munchies. Made right here at the house since my deer processor won't make it. The terryaki stuff is pretty good but it sure as hell ain't a Snickers bar at 3 am.

Must have been a helluva good burger. I'm too cheap to eat like that. I'm a blue plate at the diner, burger guy. Ours is 5.99 with fries and a side salad. Living in the sticks does have some good things that come with it. They even have scrapple biscuits all day if you like your heart attacks served up that way. Yummy.

Firstcav im a huge jerky fan. Can i ask what kind of shelf life you get with a low sodium recipe. I don’t have a sodium problem but my jerky doesn’t last all that long anyway so why not cut out some salt. Looking into this
I freeze it if going to sit a long time which does affect the flavor a little bit but I try to make small enough batches that I use it up in 3 months or less. The shelf life is more from how well it's vacuum packed and if you Nitrogen purge it. If I eat it or give it away in that time frame it's fine. My wife found this stuff called low sodium, sodium. I have no idea how it's made but it's salt with low salt content lol. I hated the salt substitute crap they had and have crazy high blood pressure so this let's me use a little table salt on my food and not jack up my BP as bad as it used to. I substitute it with most of the stuff I cook with including the jerky recipe and never noticed an effect on the cure. I use a cheap Walmart dehydrator for drying and a recipe from the hunt club for different rubs or marinades. There's a good website, or used to be called the Meat Man. He sold a bunch of great stuff for jerky and I still use some of his rubs for my game meat. If you really want it to last a long time you need to use curing salt like sodium nitrate but that turns it all red like store bought jerky and I've never cared for it. Hope that helps some.

And you haven't lived until you've had camel, yak and alpaca jerky. That's what I've been snacking on since Father's Day courtesy of my son's twisted sense of humor. Mythical Meats is the company for anyone brave enough to want to try such gourmet foods :bigjoint:.

Yes sir it does thank you. Im not a fan of store bought myself. I don’t like sticky chewy jerky either the thick cut beef sticks some call jerky. I like the tough stuff but full of flavor. I like a piece i can use like dip and may take an hr to get through. Funny you posted that, a buddy actually has a family alpaca farm hmmm . Naw maybe ill just keep him as a friend lol

Yes sir it does thank you. Im not a fan of store bought myself. I don’t like sticky chewy jerky either the thick cut beef sticks some call jerky. I like the tough stuff but full of flavor. They all gotta die some time. If it's natural causes and they were healthy.... yummy :mrgreen:. Just kidding, I still would stick to my deer but it wasn't half bad.I like it that consistently too. I don't care for gummy bear jerky at all. My cousin used to manage an ostrich farm for a rich Dr. that thought he'd get richer being a farmer. I loved that meat. It's super tasty and lean as hell. They were mean though. The males were nasty bastards and would attack if you turned your back on them. He wore a Jason hockey mask on the back of his head to try and fool the evil bastards.
I'll try just about any kind of game animal and I have tried most of them thanks to living in DC with all the different ethnic restaurants and hunting most of my life. Some , I'm sure if I mentioned here would really offend the delicate so I'll just say I like to eat and I'm not picky.

I though about trying the Rocky Mountain Oysters today, but I wanna bring my kids too so we can all eat some testies as a family, :lol:.

Ostrich burger was delicious!
