Water Levels/ Changing Water?

Hey guys,
I'm thinking I want to start a grow this summer in a bubbleponics system.

Only problem is, I won't be home for 3 weeks in july and 2 weeks in august.

My idea was, Veg for 2.5 weeks in june, switch to flower when I leave in July, and then use the 2 weeks away in august to flush the nutes.

Question though: what will happen if I don't change the water for 3 weeks? Also how much water do the plants use daily?
I was thinking of building a larger one of these:

and just feeding it straight into the reservoir
will that work?
Should I make the backup water really basic to prevent acid buildup in the tank?

Alright lets see here
3 plants = 1/2 gallon per day for 21 days
2 plants = 1/3 gallon per day, but I'll assume they are bigger since they aren't in an AG so 1/2 gallon still
21 days/2 = 10.5 gallons, I can definitely pump that from an 18 gallon tote or something with a timer

Question though: what will happen if I don't change the water for 3 weeks? Most likely root rot. Before you leave thoroughly clean out the tank with peroxide. Leave the water level 1/2" below the netpot.
Also how much water do the plants use daily? Depends on the size of the roots.

will that work? Yes it should work. I would not recommend any rockwool if you plan to drip. PH in rockwool changes. Then again the PH is going to change with such a small amount of water. you may need 4 weeks of flowering with most plants. If you can get clones this setup would work well.

I would keep that top drip going 24/7 and a t8 or t5 above 24/7. GL

by backup water, I meant the water that will be dripping into the reservoir to replace the water used by the plants
also, what does drip clean do?
also i can't keep the light on 24/7 during flowering, what do you mean?
also what do you mean by top drip? I was planning on just running the drip system straight into the reservoir just to replace water used by the plants
