Using natural soil, 6.5 pH, high N, low P, high k

So I have a decades-old beaver dam full of rich organic compost and I've been robbing it for soil and growing my lovelies in it. Mixed in some peat to give it a less clay-sand heavy composition.
So far a few have had their lower leaves start to fade yellow from the ends and a couple had just the tip burnt. They were slightly root bound for a short while though. One consistent thing is that some start showing small rusty orange spots then the leaf tends to die off. I'm growing tomatoes as well. I'd like to stay as organic as is reasonable given that I'm growing two things that are going in my body and they both go down better with good flavor.

Bought a 12$ soil tester kit and deduced that the N-P-K is high-low-high and the PH is only just barely acidic (6.5).

What can I expect as the plant progresses? One seems to struggle, another seems vibrant and bushy. There's no overall trend towards a bad outcome so far. I read that you want high nitrogen in veg and low phosphorous and potassium. Then the opposite in flower. If I add bone meal to make it have an even level of all three, will it further hinder the plant in veg? In other words, should I wait til flower to add bone meal? From what I read, soil buffers well.

Will I be able to sustain the pot plants by adding more soil throughout its life, or will I need to add neuts in order to get a decent outcome? I realize the answer to that question is hinging on a lot of other factors, but just humor me.
