Simple questions about soil and PH

Guys, I know there's a lot of information out there about soil and if I do a google search something should come up, right? Well I did that and just couldn't find or get a direct answer and It's been four, five years since I last grew and I'm getting back into it. The issue is I always did hydro, aeroponics to clone and most the time I went SOG in a four bucket RDWC. Now I live in an apartment and i don't want to risk doing a hydro grow and getting water anywhere. So, I'm doing soil this round to see how it is and I'm not having good luck to be honest with you. I bought miracle grow and it says it feeds the plant for like 3-6 months. I know I should've gone with a better choice, witch will be foxfarm. That's also the nutrients I'll be buying, the entire line. I know I'm bouncing around and I apologize. It's only suppose to be in the miracle grow soil till the roots need more room and I have to transplant. So when I'm ready I will rinse the roots off as best and gentle as possible but I feel like I'm going to struggle and burn my plant more than it already is. So the ultimate question is, (drum roll) if I'm feeding the plant water that isn't ph balanced if I balance the ph of the water will that dial in the ph in my soil? I don't get why people say hydro is hard. I check my plants every 5-8 hrs so balancing the ph was never an issue, it was cake. I know it sounds crazy but I did a search and couldn't find the answer. Really, I just want to know how to dial it in with my unbalanced ph water using the GH ph up and down. Also what is the best PH for soil? In advance guys, fucking thank you!

So I finally found a forum that says not to adjust the ph at all. So I guess my new question is can I feed the plant a little extra water and collect the runoff and check PH that way?
