i think a big key in making famous fried chicken is to brine it.

Look up America's test kitchen/Cook's Country. they have tested countless fried chicken recipes. just the other night on create channel they did a spicy famous fried chicken recipe. u can get that recipe for free cuz its on this season, otherwise u gotta pay cuz they are so good.
