Plants start going yellow after 3 weeks from seed.

the instructions say just to dip it in water, turn it on, put in 2 inches water and read the reading, and it only talks about the ppm ratings so im pretty sure its just ppm

Well, now if you are measuring for 200ppm in nutes, you would add 200 for nutes + 157 baseline to get 357 combined. So, when it says 357 on your ppm pen, you know you have about 200ppm in nutrient solution.

You need to also remember how Coco works. You need to flood it for a bit. the fibers will absorb and the remainder is what the plants get.
Normal rule of thumb is to run the water for a little while. let it run out for a bit.
this way you make sure the plants roots get enough.
They need a long drink EACH TIME
The yellow seems like
1st ..Time to transplant into a bigger mediam or
2ND start running your food for awhile longer then you have been

It seems like you might be starving them.
In a sense you want to stress them out a little to make resign... in soil (in my opinion and others) its good to let it dry like you did and that makes the roots grow looking for food
This is all just one growers opinion
but your diff. is due to not watering enough for Coco medium

Everything everyone has been telling you matters a lot and sound advice.......But you need to do more research on growing with Coco
I harvest in California and Florida we like Coco fibers,croutons and everything else.
It is kind of temperamental and does have a certain way it likes to be fed.

when I am watering I do let the water drain out and I do give a really good watering and it didn't need to be transplanted but I did anyways to a bigger pot, the leaves have drooped now but I am sure it'll recover.
 
got a ph tester tap water is 6.8, local hydro guy told me to get an air pump to aerate the water because the chlorine in the water could be killing them, hes doing the same for his growing. also he gave me a weaker form of nutes because even at 1/4 strength of my hesi its giving nute burn
