Plant not ripening in Organic, No-till

Im currently on Week 10 from flipping to 12/12. Two Dance Worlds looked about ready to die 10 days ago so I took them down while trichomes were mostly still clear. Now my Strawberry Diesel x C99 is looking about ready to die with leaves nearly all wilted and yellow. It’s got some milky trichomes but most are still clear. Then I have a Jelly Kush and two Mandarin Dreams that still have mostly pistils, nowhere near done. Luckily, the leaves on the last two are still alive and mostly green...for now. This is my first grow in organic no-till soil, first time from seed and first time using Cob LEDs. My little experience comes from commercial cultivation facilities using Rock Wool and cheap HPS lights...only growing from Clone. All of these plants were advertised to be done within 8 weeks. I’m not sure what to think. They have had my attention and care from beginning to now, but I’m baffled as to why they are all delayed. Any ideas? I know that you just take the plant down when trichomes are mostly milky (with some amber on Indica Doms if you want sedating couchlock), but I’m afraid they will die before they are ready. I actually am only giving them 11 hours of light for the past 2 weeks, trying to speed them up. I also stopped giving teas or adding any inputs a couple of weeks ago. I turned the light intensity down, C02 down and kept the temps below 80 after C02 was turned down. Each plant has its own 25 gallon fabric pot. I only water 3 times a week and not excessively. I followed the Buildasoil program very closely, but I’m not thrilled. Help would be great. Thanks
