Lemon Bar Reciepe Anyone?

[h=3]Ok so I snagged it off allrecipes.com but I was very happy to see the idea... who in the world HATES lemon bars??? (ok now I am sure 20 are gonna post saying they hate them..lol)


Ingredients[/h]
  • 1 cup CANNA butter, softened
  • 1/2 cup white sugar
  • 2 cups all-purpose flour
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1/4 cup all-purpose flour
  • 2 lemons, juiced

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

and OP, you can pretty well trade any recipe that calls for butter straight across for cannabutter. if you think it might be too strong like that, you can use half regular butter/ half canna.

Here's one from Aunt Sandy's Medical Marijuana Cookbook. A little different from my "normal recipe". Haven't tried it yet, but here you go:

Blue Sky Lemon Bars

Crust:

3/4 cup cannabutter
1 1/2 cups unsifted flour
3 cups sugar
pinch of salt

Filling:

6 large eggs
3 cups sugar
grated zest of 1 lemon
1 cup fresh lemon juice
12 cup sifted all purpose flour
1/4 cup powdered sugar

Instructions:

Preheat over to 350 degrees

Mix the 1 1/2 cups of flower, 3 cups sugar, and salt

Add the cannabutter to the bowl with the dry ingredients.

Using a pastry cutter, blend the butter and dry ingredients into pea sized pieces.

Press dough into the bottom and up the sides of a 13x9 baking pan, ungreased.

Bake about 25 minutes or until golden brown.

Remove from oven and let cool.

Reduce oven temperature to 300 degrees

Whisk eggs and 3 cups of sugar together until smooth.

Stir in lemon zest and juice.

Add the sifted flour to the egg mixture and mix thoroughly.

Pour batter over the baked crust.

Bake another 35 minutes until the topping is set.

Remove from oven and let cool.

Finish by sprinkling powdered sugar on top.
