Is harvest time a factor with strain taste?

I know if you harvest early, you get a more "clear" high and late harvest is a more sleepy high but what about the taste of the strain? For instance; I would like my strain sweet/fruity. ( Its description is sweet tasting) . Will harvesting earlier or later help bring out the desired taste or does it have nothing to do with that?

Letting a plant go until it reaches full maturity has always brought the strongest flavor and smell for me. The drying process is critical as well for preserving the flavor and smell of the buds.
