how many of these should i use for three plants?

i'll probably have only one or two left after they show what sex they are, so how many lights would be good for this many plants during the flowering stage?

depends how big of plants you are growing.

the sky is the limit. the more light the merrier and you're going to have a hard time "overdoing" it with CFLs. The limit is when you realize what an idiot you are for spending the money on cfls when you could have spent a few more dollars and get a real light, and you wont even be able to use those cfls for home lighting in most cases because they are too big.

On average you need 3000 lumens per square foot for marijuana plants. A 42w cfl like you have produces 2800 lumens if I recall correctly from the package. I would think you would be ok with 4-5 of them if my calculations are correct. It's a florescent so use as many as you can get in your grow space keeping them a couple inches away from the plants as those bulbs get hot.

The general rule is 100 watts per plant so in theory it would take (3) 42 watt bulbs per plant. SO 9 bulbs should do it.

However, if your plants are tall you may need more than 9 bulbs in order to provide side lighting for a good yield.

You can never have too much lighting or too many CFL's.
