topping is somthing done when they are very young, I wait til three branch sets, top, and remove the lower branches.
And how you do it, just break of the main growing tip and the lower set of nodes will grow out and make a "Y"
At that size I suggest some LST, low stress training. In other words, tie down the main top to let the lower branches grow out and keep the plant shorter
