SO I just harvested my trees.. Heres the steps i took
1. Ran water and clearX for approximately 7 days..
2. Emptied water and medium took plants still in tact and put them in dark for 4 days
3. 5th day i cut and hung stalks in room that was 70% humidity and 73-76 degrees.
4. 6th day we trimmed all fan leaves out of flower area
5. 7th day Humidity is rising to 80% and above i have dehumidifier in room as well as several fans along with my central air unit i can control.. Whole room size is 500sqft

My question is if i cannot get humidity to drop what method should i use to get the best dry and Cure to maintain levels and aroma.

That is a relatively large room, so it's not surprising the dehumidifier is struggling. I would try to partition the room by hanging plastic or moving to a smaller space.
