Cut the mold away and remove it from your drying area. All of it. Better to err on the side of caution than risk smoking mold. Toss it, definitely not worth smoking. As for what's left, I would personally dry it out quick and hope to gain some flavor in the cure.

How do you prevent mold while drying?
Burp as necessary.....
Mix buds inside jar - I use a chopstick
Use a Hygrometer - FLEABAY digital hot them for as cheap as $2 each ( China )
Break buds down , especially big colas ....
Keep jars in dark cool spot .... Under bed , back of closet , styrofoam cooler , etc.
dump jars and inspect buds ...

As time goes on , smell will change and either be very dank or within buds .
You can slightly crack and smell inside ....look for grey , white, brown or odd spots .
Some growers CUT AWAY bad spots but I don't risk it . I toss any shit that looks jacked up. You can use BOVEDA packs (62%) to stabilize RH and they keep things fresh.

keep temps around 70f rh around 50% air movement but not directly on the plants.
let plant soil dry for a few days before harvest. trim off all fan leaves.
hang plants upside down or cut off buds and put on drying rack (dries much faster then hanging)
wait 5-10 days (give or take) stem should snap ie stem is not flexible anymore.
when buds are dry you smoke them, distribute them, or as I prefer cure them.
