Greenhouse Questions!?

Not sure if the outdoor sub is the proper place for greenhouse related questions so sorry if I'm in the wrong place.

The property I'm renting has a nice 75'X125' concrete slab that's just begging me to build a greenhouse on. I haven't worked in a greenhouse since my highschool horticulture days (took greenhouse management class) and although I remember pretty much everything about environmental controls within the greenhouse, I'm kind of lost when it comes to the actual structure.

For the greenhouse growers here using the larger pre-fabs, what type of greenhouse works best? Will a cold frame with polycarb ends work? No snow here so I don't have to worry so much about load rating. I'll do light dep manually for now and if things go well I'll upgrade down the road.

Also, generally with indoor the ideal yield is 1GPW and outdoors people usually look for a per plant yield, but what's the magic number for a properly dialed in greenhouse? Is it per sq ft? per plant?

Holy crap, those are some friggin trees man. Any suggestions on brands? That looks like it's a gothic style cold frame, correct?

And then wrap it in something like this http://www.greenhousemegastore.com/product/solarig-classic-woven-greenhouse-film/plastic-film for added privacy.

Since it gets so hot in the valley, I'm assuming I'll also need a decent sized Evaporative cooler to help keep daytime temps from going crazy.

Somewhat off topic, anywhere in Norcal with good clones? Haven't been here long enough to network with any other growers, so going to have to find some clones (or seeds, worse case). Last time I got clones from an un-verified source they ended up having all sorts of problems.
