nothing wrong with the jiggle and steam so long as you don't run out of water. That is the point, the weight regulates your pressure at 15 lbs, it can't get any higher unless you do something foolish like plug the exhaust holes.

What about the substrate? I did it all over again and there is less moisture but the bottom couple layers where the popcorn is touching the glass you can see the moisture in it. Is it the fact that I'm PCing the jars with the lid with the TYVEK filter on it? "The forums folks" on another site said that I could PC the jars with the tyvek filter and the sealed innoculation port and it should be fine. But I can't help but assume that they are getting moisture in there due to that or the fact that the corn is heating and dumping that built up moisture and it has a difficult time getting it to come out. I went ahead and innoculated the jars because they looked far better than the last run... But I just my cambodians so I'll be doing this again REALLY soon and I would like to get it right for these because these are the ones I want to come through for me.
If your corn was properly dried in the first place you will be fine, if you see a bit of condensation, you will likely be fine as well. remember, this organism really really wants to grow, that is its job.
