nothing wrong with the jiggle and steam so long as you don't run out of water. That is the point, the weight regulates your pressure at 15 lbs, it can't get any higher unless you do something foolish like plug the exhaust holes.

But I can't help but assume that they are getting moisture in there due to that or the fact that the corn is heating and dumping that built up moisture and it has a difficult time getting it to come out. I went ahead and innoculated the jars because they looked far better than the last run... But I just my cambodians so I'll be doing this again REALLY soon and I would like to get it right for these because these are the ones I want to come through for me.

If your corn was properly dried in the first place you will be fine, if you see a bit of condensation, you will likely be fine as well. remember, this organism really really wants to grow, that is its job.
