Yep. It's when I'm doing single gallons that I can really overshoot it with the PH up or down. I just start over! 
My res.
Rather than use PH up, I primarily use silica.
Because silica should (in most cases) be added first to RO or Tap water.
The trick is learning how much silica is needed on average to hit your target PH once all nutes have been added.
For me it's about 1ml per gallon of Armor Si. (not all silicas are alike)
Sometimes I need to adjust the res with a little PH up, or down. No biggie.
