I just wanted to know what's the science behind the curing process. Is it a little like making homemade sake - sticking it in a pot so that the smells will mingle and that the taste will develop, but opening up the pot once every day to allow a gas exchange and not get any mold.?
I guess what I mean is... please explain the process as much as possible?
(No, don't answer as a "Go search yourself" type of answer, since that is not quite a good one at that. There's a lot of BS growing site out there, as you might know, and some people have a tendancy to take any info that seems to make sense to apply it.)
