can someone kindly explain to me the symptoms of a hydro plant that doesnt get enough nutes vs the symptoms of a plant that gets too many nutes, and possibly the symptoms of a bad high ph of the plants? thank you in advance

OK - you are asking a few questions so let's start with pH. The way i understand it, different nutrients like Nitrogen and Magnesium require different pH levels to be absorbed by the plant. Not all nutrients require the same pH but most can be absorbed around 5.5-5.8 (some more, some less).

So you can have a situation where you have the correct amount of nutrients but they can't be absorbed because the pH is either too high or too low. The plant will suffer from a nutrient deficiency even though there are plenty of nutes in the water.

And to be honest, the symptoms of nutrient burn and nutrient deficiency can look pretty similar. You can kind of narrow things down if the bad parts are on new growth or old growth - this page may help:

But some common sense plays a role as well - for example - if your plants are showing signs of either nute burn or nute deficiency, check your pH and PPM. If your pH is in the "good" range and your PPM is low for the plants growth stage then it may be likely your plant has a nutrient deficiency.

It is just important to remember that often nutrient deficiencies are caused by pH problems rather than not enough nutes.
