Are they almost ready?

I just wanted to get your thoughts on the looks of these…. Based on the looks of them, would you let them go a little longer? One plant has lots of hairs that already changed colors and the other has a ton of white hairs still… Does that matter?

The plant in the second picture with the purple leaves looks pretty close. The other plants have weeks yet, judging on visible lack of density and the amount of white hairs.
