Any canning folk out there?? in need of help...

I just had a huge harvest of tomatillos and I made a bunch of salsa verde and put it through the canner. I realized the next day (yesterday) that I forgot to add the freakin lime juice/vinegar/acid. should i open all the jars, add the acid and reprocess them? really don't want to risk this gallon batch of salsa verde!

If it hasn't been that long since you closed them up I would for sure that's a pretty key ingredient in that process ......sounds delicious by the way........I've got an assload of pomegranates I'm guna make some jam out of myself here soon

Made some New Mexico Hot Dog Relish. Instead of 1 1/2 quarts of just jalapenos I added serranos and habaneros to make 2 quarts . 1 quart of cukes as well plus pickling spice etc. No heat!!!!! It tastes really good but like bread and butter pickles dammit. A whole flat of them.

Yes reopen and add. You know enough to use new lids.
yup for sure on the lids. rather throw them out instead of gettin sick and tossing the salsa! only been 48 hours since i canned them so i think i'll be alright to go ahead and do it. thanks. this woulda sucked

Ok. All reprocessed. I used apple cider vinegar and some key lime juice for acid. I think it turned out pretty good but damn, they want you to add a lot of acid in that Ball recipe.
