1200 watt converter NOW WHAT?

1200W/100A=12V
12v COBs normally are rated at 10W max, you can drive them at 350-700mA.
How many you can drive depends on the Current they draw at 12V so you can connect from 1 COB up to (100A/forward current at 12V.)

Thank you so much. Are there any cobs you would suggest for that forward voltage? I wanna go big with different spectrums maybe even uv infared.

You would be better looking at some strips if that voltage is correct. I really don't know what a converter is so..

But google ledgardener strip build, he lists all the best strips with voltage and current and I know you can get strips with 12v or slightly less.

Power supplies, boost-buck, inverters, transformers, etc. are AC-DC, DC-DC, AC-AC, DC-AC converters. They come rated at the output so it is a 12V source.
The only COBs I know are the Chinese chips like this

Cree also have 12V chips like XHP50-70 , they come in smd format but you can find them in star PCBs

You have like @coreywebster mentioned 12V strips, also you can use step up converters to rise the Voltage and use other chips, boards, strips, etc.
There are a lot of options to use the converter you have.
