Because seeded weed is of less premium quality than sensimilla ..
However seeded weed has its own set of unique cannabinoid profile which gets overlooked for said reasons and may have benefits above sensimilla, for some things
From a commercial pov seeded weed is worth less however and as such commercial growers strive to prevent any seeding.

Ya I hate when those packages show up. Especially late. Like ya know, it's late......................you've had a few drinks. This hottie checkin' you out. Her large buds beckoning.
You start dancin' and all of a sudden this package pops up outta nowhere and you know that you have to pluck it. You take a hold of it firmly, but gently. Slowly pulling it off before the blessed seed is spread on the dance floor. Once done you move away quickly.....knowing how wrong it was but knowing it felt so right.
You go to the bathroom and quickly wash your hands. You look at yourself in the mirror and wonder if things will ever be the same. The poor bastid never had a chance.

Hermaphrodites still have THC, even males have a little THC.
A hermaphrodite will often times have less THC than a female depending on the severity of the male expression. But, if you are just seeing a few male flowers here and there then you should still have normal or close to normal levels of THC.
Be prepared for seeds in your buds.
