Who is familiar with doing time lapse? and raid array for space.

I'm interested in doing some time lapse of my grows and could use some advice on this. I'm not too sure if I should go with a certain software, or how I could setup the software I already have. I have a Logitech HD Webcam C525, and nothing more than the Logitech Webcam Software. I also have a 2TB HDD, a couple of them actually that I was originally planning to use them in raid to get 4TB. But I've lost data a few too many times from very lame reasons. A single sata cable came loose one time while cleaning my computer. I didn't know it came loose and when I turned my PC back on something went wrong and the two raid drives I guess got out of sync and would no longer let me access the data on either drive, even after re securing that sata cable. There was some other lame reasons my raid setup got messed up as well. So now I just run all of my drives as single drives and no more raid, including my samsung EVO SSD's, that were expensive and I was planning to run them in raid for extra performance, but now I'm too sketched out and afraid of one simply coming unplugged and losing everything. I'm mad about losing my data and basically just had to vent about it while I am thinking about it. I would gladly try those two 2TB HDD's in raid again for a total of 4TB to utilize for time lapses, if someone is pro with raid and knows a safer way to go about using raid, or some trick to getting raid drives to sync again that would be great. I just don't want to take on the challenge of dealing with raid on my own.
