Whats a safe minimum depth for roots?

Looking for advice from anybody who has experience experimenting with different pot/container sizes.

I grow hydroponically with flood and drain and I use straight coco coir as my medium. Right now I'm using 1 or 1.5 gallon rose pots. I think they are just a liitle bigger then 1 gallon. Anyways, they are quite a bit taller than they are wide. This works fine but requires that the nutrient solution floods to a higher level in my table to ensure it wicks up the container high enough. So my theory is; using wider, shallower containers so only a shallow flood is required. This means less nutrient solution to flood, which means less all together... which is kind of the goal. How wide and shallow can I go without affecting root development? Was thinking somethng like the bottum half or third of a 5 gallon bucket... any ideas/suggestions?
