What would be the best time to begin LSTing

You can start LST as soon as you have a few nodes. But I usually wait for about 4-6 nodes, right about when the side shoots start to grow more noticeably.

Just gently bend the plant over so the top is as low as it can go without touching the soil and tie it down with something. It's very easy.

I don't know what a node is exactly, are you talking about the plants sex organs?

A node is that point from where the leaves and side shoots come out. Each node should have one or two leaves coming out of it with a side shoot between the leaf stem and the main stem. When you pull down the top of the plant the top grows slower and those side shoots coming out of the nodes grow faster.
