is your question how long does it take from the time you pollinate 'till your seeds are mature enough to harvest ? 4 weeks, about, the hull will naturally split open usually, and you can see the seed color. If it's brown they're good. I like to age my seeds a month before I germinate them but others say they've germed fresh seeds.
that's not what I asked, you can force into flowering after 3-4 weeks and pollinate them when you get a good load of flowers.
