It may turn purple at the expense of locking out phosphorous. So if you have to do it, wait until the last few weeks. Temps around 55-60F should be fine without killing it.

The hay taste is the result of the way your drying and curing your weed at harvest. Whether its purple or green the hay smell and taste is chlorophyll and if you poorly dry/cure your bud, your going to smell/taste it regardless of what you do.
