does a female need to be pollinated just once to produce a bunch of seeds or is it the more pollen the more seeds?

Just once. When I was in the business of making seeds I would pollinate just one branch at a time. Shake a male into a plastic bag, secure that to a female branch with a rubber band, shake well, leave for a couple of days. You will get scores of seeds on just that branch.
