With the corn - DO NOT FORGET to rinse the corn well, I know you don't want to but do it anyway, and let that stuff dry, wet kernels are a disaster waiting to happen, they need to be only a little moist. I know it seems like the mycelium won't like it but they do. If there is any free water anywhere you need to dry that stuff off. I know people who will take a towel to the kernels - you needn't be that meticulous.

Before and after simmering, I rinsed the hell out of it.
Then I took a 1/2 high bin and put paper towel in it.
I then poured a layer of corn and more paper towel on top.
A couple more layers and then I did a light back and forth shake and waited a bit.
I then transferred it to a new bin, new towels, and got the rest.
I THEN put in jars for PCing.

Well, thats a little excessive but it's a good way to learn, the next time won't be that way as you begin to understand what the results should look like.
