should i trim it when i cut it or wait till its dry to trim it
That's a matter of debate. Remove and fan leaves as you go, but the sugar leaves can stay until dry. I prefer dry trimming, but I get scared of mold during drying, so I usually do a wet trim. Sometimes I cure with most of the sugar-leaves intact, I don't care about bag appeal, it is all for me. I feel like a dry trim and leaving sugar leaves on until I'm about to smoke results in more delicious flowers. It could be my imagination, of course, but I think there's a greater than 50% chance that the final result is higher quality with a post-drying pre-curing trim.

yeah ok so should the main stem snap when i hang the whole plant or just the branches because my last grow lost all flavor

Mold would happen faster with a wet trim because the plant releases moisture from wounds.
Have you ever cut a clone and seen alittle sap droplet? I see it alot when lollipopping plants too.

Don't let it dry to the point of snapping stems, it's too late for proper cure @ that point.
When the buds dry and the branches are slightly flexible, it's time to start jarring+burping until your in the ~60% humidity range in the jars

There is a thread just for harvesting/curing with more in depth details.

If you trim wet, it's more important to have the right ~65 degree temp + ~40-50% humidity or they will dry too quickly.

If you hang the plant without removing any leaves it doesn't matter quite as much(still need 55% or less humidity)
