I did one big thing of corn its nice and white but water has made its way to the bottom and there is no colonization there i could maybe take out the colonized block part and lose those uncolonized kernals??

If you are thorough, it may work., simply peel away everything that isn't fully colonized - EVERYTHING, and set the block to rest in a friendly, environment for a few days to see how you did.

Or, you can break up the whole thing and put it in a tray and wait. If you smell anything untward at all, toss it.

Hi:

You might be able to just flip it and incubate longer... the extra water will drain to the bottom of the jar around the main block... then the uncolonized section at the top gets a chance to fill in.
