Hobo Wine Heaven

As a devout DIY-er I have very recently attempted to make some hobo wine from good old rapid rise yeast, water, sugar, and apple concentrate. Although not completely finished fermenting, I had a go at one of two bottles after 2 and a half days and ended up with a mellow buzz and some okay taste (just a bit heavy on the bready nose).

Just wondering if anyone's made their own easy alcohol. Looking to use some champagne yeast next time for a better flavor, possibly a turbo yeast for higher alcohol. Would love to hear suggestions.
