Hermie late in flower, at day 48 some seeds, chop early?

I have 2 plants showing same male bananas in the middle of the flowers, with some seeds starting to develop. 3 are not showing them and have no signs of seeds. I haven't found any flowers that opened but apparently some did somewhere.

It's day 48 out of supposedly 60 day strains.
Should I chop at day 60? (which I think will be slightly early).
Should I let them go until fully ripe? Would I be better off with seeds that are bigger and more developed, therefore easier to pick out? Or go earlier to keep the seeds undeveloped?

really like the big seeds.

they dont break down in my grinder as easily and they are actually growable when nice and big.

these bananas when in late bloom arent the signs of hermie they are an emergency reaction from the plant to try to create seeds before its too late. these seeds would be female as the plant is still female. this is how seed banks create all female seeds. there is a few things u can do. if you dont want seeds at all just harvest and pick out the bananas. if you do want seeds but in another harvest , leave it a few days till the pollen is ready then keep in a clean glass jar in the fridge.

I don't need pollen. I'm just picking the bananas when they show up and letting them go until ready. Only found one big green seed so far, and several bunches of tiny hard brown ones. I had a few problems with temperatures and light leaks so it probably added some stress.
