Help me understand ph in general

Looking at your information... you will need to provide more info. Type of soil that you are using will help the best as peat based soils are hotter (lower ph) than other type soils. You want to go off of your soil ph, if you can get a hold of a good in soil meter use it, otherwise you can get a good idea on run off. I used Miracle Grow MC 6 months and I could water with 9+ ph and the run off was still around 5.2 which is too low for soil ph. I am using better soil now, still peat based, but have added dolomite lime into the mix to help with ph balancing. Just thinking about it, water PH is important as you want the proper range going in.

that doesn't answer any of my questions.

umm, yes it does.. throw your ph meter in the shit can if you're growing in soil.. absolutely no need to ph your water and especially not your soil so long as you're using some form of a quality store bought soil mix..
