I used a kit like that for years before switching to Japanese waterstones.
It can put a scary sharp edge on your knives. With that kit, anybody can take their knives to the point where they can shave with it. Screw down the clamp to hold the knife, attach a guide rod onto the hone and slide the guide rod into one of the slots on the clamp. Put some oil on the stone and start working the edge of the the knife. The guide rod slides through the slot on the clamp and keeps the hone at a consistent angle to the blade. Works best on stiffer, shorter blades, 8 inches or less. Fish fillet knives that have a lot of flex are a challenge in that set-up.
Once I started using that kit, I was never satisfied with using other people's knives.
