Growth Patterns of Seed plants

So Im growing from seeds for the first time and looking at the new growth Ive noticed that the plants do one of two things first.

1. Plants grow big fan leaves with 1 or 3 leafs.

OR

2. Plants grow smaller fan leaves but grow 3 - 5 leaf, fan leaves sooner than the type 1 Plants.

Now this is right around when transplanting and theyre still small/not fully developed leaves yet. Maybe 2-3 weeks old?

I guess Im just wondering which of these growth traits are more desirable? Does it tell me anything about the plant in terms of growth speed or quality? Im interested I just want people to talk about it, thoughts?
