Food Cart Busines

I have been looking into opening a small food cart. Seems like a business that can be set up on a small amount of capital and if worked right can be a rewarding job both personally and financially. I am already working in the food industry and also am finishing up my degree in small business management and want be my own boss. I will specialize in mexican cuisine offering carnitas, carne asada, and pollo tacos or burritos, served with fresh lettuce, onion, cilantro, with a choice of corn or flour tortilla. Of corse beans and rice will be available. . Also I plan to serve my own secret organic homemade salsa that comes in Hot or Mild, very mouth watering. And for beverages the basic horchata, tampico, sangria, etc.
I plan to get the proper permits and licensing to sell at high populated locations throughout the county.
Are there any professional food cart owners or any respectable entrepreneurs with advise in this type of business. Any thoughts or constructive criticism could be useful in my planning.

gyros are the way to go, and hotdogs, but the trick is finding the perfect location preferably the drunk crowd with no where else to find munchies without driving,

I have been thinking of the same thing but with a differant approach, your better off than most with having some schooling but anyway where I live theres around 6 to 8 county fairs and most run 10 days or more,I have been going to these fairs throughout the summers for years running demolition derby cars and even the guy selling the crapyest food has a non stop line of customers,I make one killer of a london broil sandwich,my problem is knowing how much stock I would need per day.Its a scary venture for me because I have no exsperence in the food industry at all,but I'll figure it out one way or another if I can do 6 fairs a summer I could make enough to kick back the rest of the year or travel if I want. this is my retirement plan

Sounds like a great plan BS87, I wish you luck dude.

I saw something a couple months back about the food carts in Los Angeles county, the city was trying to set some shit up so the vendors had to get specific permits in order to operate, I'll see if I can find the clip...

I'd like to be my own boss someday too, I hope it works out for you. What county/state are you in?
