Hi pgh, they're looking great, look like they're in very good shape but can ripen some more, they should be able to go at least another week. Depends on how much amber you want, it's a personal preference thing but they can ripen another week easy imo and you'll get some fattening up. I'd feed them once more then give them water for the last 1, again that's a preference thing. Myself I don't flush but I don't feed very much either (600 ppm) and feed every other watering on average. Just keep a close eye on them now every couple of days and chop depending on how much amber you want. I typically let them go until i see about 5% amber, at that point all the clear has gone cloudy and I prefer more of a head stone.
You could chop in stages and let the bottom stuff mature a bit more if you don't need the room right away.
