A random menu i've come up with :)

Just wondering what anyone thinks. At a course at present and have been asked to make up a menu that i'll be cooking up for a bunch of people in the next two weeks. There's not too much rhyme and reason to it but it is food that i enjoy :) Kinda a hodgepodge of asian and carribean food, mixing fancy food and street food.

Starter:

Soft shell crab deep fried in a rice flour and chilli tempura with raw bean sprouts and thick soy

Amuse Bouche:

Kiwi sorbet

Main:

Bake and shark (basically a funky shark burger :)) marinated in a green dressing with rice vinegar slaw and tamarind sauce. With a watercress and mango salad on the side

Desert:

Fresh lychee with raspberry ice cream and chocolate sauce


Whatdya think? :)

nope this is posted in our riu cafe so its weed free, i think it sounds good id save kiwi sorbet until desert

Nah the kiwi sorbet is in the correct spot, although it should not be too sweet sumptin more like a palate cleanser or maybe like a meyer lemon sorbet or the kiwi with a lil key lime addition. The only other thing I might say is the lychee might not go that well with a chocolate sauce, maybe instead of lychee sumptin like fresh or maybe a puree to go along side the chocolate sauce on the raspberry sorbet. Lol sorry I forgot to type passion fruit.

I figured the sorbet as the cleanser as it would be a nice delicate flavour if not too sweet to break up the deep fried crab and the deep fried roll and shallow fried shark. The chocolate sauce is still not concrete, but i like the idea of lychee though. Got to keep on top of the sweetness of the desert as i know few people at this place enjoy deseert too much as they just tend to find it too much following a pig out. Looking forward to cooking it though :) :/ 6 A4 pages of stuff to cook.

lychee goes well with chocolate if done right, in my opinion i know what you mean as a kiwi sorbet as a Platte cleanser, as long as it isnt too much
