Just get a lumatek digital ballast Lumatek System I am 100% HPS currently but should I decide to try MH at least the option is there. Tell us about your space, IMO anything less than 10X10 is going to need some serious ventilation. 5X5 you better have AC on 24x7. Good luck

How many plants also depends on how you are growing. If you are using soil and your pots are 8"-12" then not that many. If you are growing hydro in 3" pots 3 to 4X as many. Or you can use a system like the picture below and do hundreds in the same space.
As for the bulb type.
Everyone loves the HPS but I like the MH multi spectrum. Here is why
HPS puts out little to no UV light. MH put out a lot. Crystals/THC is created to protect the plant from UV. If you dont give it a reason to protect itself it wont make as much. HPS does have a huge advantage though. It produces a higher yield. Do you want more pot, or stronger pot. I recommend the ballast in the post above and a MH multispectrum bulb

so you're saying that millions of years of evolution and genetics can be thwarted in 3-4 months because of a light bulb?

Genetics is half of the equation. The other half is is environment. Can a genetically superior plant survive without light? Marijuana is the fort plant to be grown indoors for 50 years. Look at the difference it has made. Nugs in the 80's are mids at best now.
