    Do you eat beef jerky? Its those little paper packets with silica gel that you get with a lot of food thats supposed to stay dry... You dont need to dry it to a crisp lol. theres plenty of tutorials on proper drying/curing

Heat is a problem but since it is underground you have a natural cooler that should keep temps constant Dont worry about mold just make sure its dried and cured properly and in a airtight container...
