Organic soil requires a constant saturation level for microbial activity so you never want bone dry..I think its still up for debate when cooking soil.. I store my soil in totes that are pre-drilled with multitudes of air holes, I then store with the lid half on so to give a much slower wet/dry...

Avoid using promix, its prelimed and at a very inconsistant rate, you'll surely find some CEC imbalances. Best to use plain, Premier brand peat...or as I've been experimenting, a coco/blank peat blend. Best of luck.
