But wouldnt adding fertilizer so close to the harvest change the weed's flavor? Or what about adding a natural fertilizer such as guano, would that be less harsh on the weed?

But when should I harvest because the bottom leaves are starting to fall out probably because there's not much sun, its usually cloudy and there are only 10 hours of daylight. If I leave it more time can it grow a bit more or is it even possible for it to lose some of the weed that has appeared?

No because I only used fertilizers for the vegetative state. Then I just stopped using because I think I used too much. But now I think it's to late to add anything because I'm near harvesting time.
