what are the advantages and disadvantages of going 12/12 right from the start?

I have some stuff i just cut up, it smells so strong I have to keep it in a sealed box for now. my question is there anything I could put into yhe box to absorb moisture so I dont get mold ? Is there any other tips on mold prevention while drying in a box?
