can u bake with freshly harvested weed?

i harvested all of my plants but 4 of them. This is because they just dont look ready . im not familiar with the strand because i dont know what kind they are. most of the fan leaves have died but the buds still dont look ready . im growing under a 600 hps. will the buds still develope further...
