Same here, I leave them in the paper towel for about a week after they crack or until the root is about half the length of my pinky before planting and I noticed fast growth as well

If you are growing in a small space perhaps you could put one or two "sponge cups", basically put a sponge inside of a party cup or glass, soak the sponge till it can't hold anymore wate rand fill the cup about halfway so the top half of the sponge is exposed to air, that will keep some humidity...
