I water when she needs it, right up to the end. Stopping water only does one thing - thats reduce the amount of drying time after you harvest. I'd maybe not water within 24-48 hours of harvesting if I'm in a hurry, but otherwise, keep the plant happy right up until harvest.

Yes, sometimes you do get nice stuff for free. The free seeds are no less likely to germinate than if you'd bought them. At least from my experience.
