Unless your in an part of the world that is below the equator I would bet for what ever reason this plant needs more darkness. It could be the strain or even phenotype. Did you start flowering inside with this plant?

Epson Salt is Magnesium Sulfate, so yes it will correct a Mg deficency. It also can effect your PH and PPM especailly when using nutes so keep an eye on it.

I would suspect a PH fluctuation. I would flush and keep an eye out on my PH.

It is not uncommon for buds to increase in size greatly in the last two weeks of flowering. I can not find any reference to what strain you are growing but 8 weeks is not a very long time to flower. Depending on strains you can flower 12-15 weeks for sativas and Indicas can go 10 weeks easy...
