By crisp I think you mean that the leaves are turning hard and are starting to get coated in trichomes. This is normal and your plants look fine and healthy. Looks like a Sativa dominant strain I bet that will smoke well if you let it ripen.

That plant looks very young. I would say at least 4 weeks. The stigmas (white hairs) will darken first and then the trichomes start to darken causing the plant to change colors and glow.
