i've heard to put a plant into the dark right after cutting it down because it is still alive and will stretch for light if it see it. end resulting in more airy buds. (idk if its true or not)

ima say 7oz. because its your first grow. i doubt anyone gets the full potential of a plant on their first grow. but i'd say you could get up to 14 as superbak3d suggested
i believe the leaves lose color when they start to use the nutrients they have stored in them? but in your case it looks like its not getting enough nitrogen or phosphorus, i cant remember which makes the leaves like that. search this site theres many threads about this kinda stuff

i prefer to trim them straight off the stock then put them into a dry box because it seems to turn out the best.
but someone told me you have to let the crystals settle before trimming? idk..
